Kielbasa
(2 packages)

any kind will work but I think Honeycrisp, Golden or Red Delicious work best

Olive Oil
Instructions
Slice kielbasa about ¼ inch think, try to keep consistent.
Dice onions put to the side (I usually place in a bowl until needed).
Dice the apples into cubes, put to the side (I usually place in a bowl until needed).
Put the Tbl of Olive Oil in a frying pan and put in the sliced kielbasa. Stir the kielbasa occasionally.
Once the Kielbasa starts to brown add the onions.
Let the onions cook about 5 minutes until starting to brown and then add the apples.
Cover the dish for about 5 more minutes to cook the apples, once the apples are softened (not mushy!) the dish is ready to serve.

Serving Suggestions:
You can eat on its own or if you are looking to round out the meal it can be served over a bed of rice with a side salad.
