Instructions
Instructions for frying:
Cut the sweet potatoes into thin and EVEN slices (between 1/4 and 1/2 inch thick).
Heat 4 cups of oil in a 6 quart stock pot or a dutch oven over medium low heat. Be careful not to have the heat to high as it will burn the sweet potato fries.
Once the oil is heated drop the first batch of sweet potato fries. You will want the fries to all be covered in oil (you should have 2-3 batches to cook).
While the fries are cooking in a small container mix the paprika, garlic powder, salt and pepper together.
Cook until the sweet potato fries start to turn a golden brown, usually 7-10 minutes. Remove the fries and place on a plate covered in paper towels (helps absorb the excess oil)
Sprinkle the seasoning generously on the fries. Repeat steps 3 to 6 until all of the sweet potato fries are cooked. Enjoy!
Instructions for baking:
Preheat oven to 400F.

Toss the sweet potatoes with 3 tablespoons olive oil.
Add the paprika, garlic powder, salt and pepper and toss with the fries.
Spread the sweet potato fries on a baking sheet flat (try to avoid the fries piled on each other).
Cook the sweet potato fries for about 15 minutes and flip the fries and cook for another 10 to 15 minutes. Enjoy!
