Braised Brisket
Our favorite resort to visit in Mexico is the Beach Palace in Cancun. It is an all-inclusive resort and the outdoor grill has the best brisket. I believe their brisket is a braised brisket that they finish on the grill.
Seriously, besides the ocean it is one of the things that keeps bringing us back to resort and I have been known to eat there almost every night of the vacation. With the world on lock down due to COVID, I know we will probably not be making the trip again for awhile. So I set off to try and copycat the recipe. It has taken months, but this is really close!
A few things to remember about Braised Brisket…
Brisket is a tough meat to work with as it is a lower quality cut of meat. There is a delicate balance between making the meat tender and juicy.
There are few important steps that you have to follow to ensure both.
- The first is searing the meat to help hold in the juices.
- The second is, once the brisket is done cutting it into thin slices and letting the meat soak in the braised liquids.

Braised Brisket
Ingredients
- 2 ½ to 3 lb brisket
- ¼ cup olive oil
- 2 large onions diced
- 6 cloves garlic
- 1 teaspoon thyme
- 2 teaspoon rosemary
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Season the brisket on both sides with thyme, rosemary, garlic powder, salt, and pepper.
- Turn the stove onto medium heat and pour olive oil into cast iron pan.
- Once the olive oil is hot place the brisket on the cast iron pan, let brown and flip brisket, and brown the other side. DO NOT COOK!
- One brisket is brown on both sides remove from cast iron pan and add garlic and onions, cook until translucent.
- Once the onions and garlic are done add the brisket back to the pan and cover tightly with tinfoil.
- Place cast-iron skillet in the oven for 300F for 2 to 3 hours.
- When the brisket is done cooking remove from oven and remove the tin foil. Let the brisket rest for about 30 minutes.
- Thinly slice the brisket against the grain and place back in the braising liquid in the cast iron skillet for about 5 minutes. Enjoy!
