What’s the Difference in the Color of Bell Peppers? 

Add some color to your dish by using a bell pepper or two!  I would suggest using red, orange, or yellow, not green, due to the sweetness. The longer a pepper matures on the plant, the more it ripens and the sweeter it becomes. 

Tasting Table has an excellent overview that red and yellow bell peppers are essentially just green peppers that have been allowed to ripen.  Red peppers are the sweetest; green is on the more mildly bitter side.

Let's Get Cooking! Greek Bell Peppers and Feta

To begin cooking the Greek Bell Peppers and Feta slice the bell peppers and onion.  For the garlic you will want roughly chop.  Add bell peppers, onion and garlic to a medium size frying  pan with some olive oil.

Saute until softened and add the paprika.  Cook for about 10 more minutes until the onion and garlic start to brown.

  • 3 bell peppers (mix of orange, red and/or yellow)
  • 1 onion medium
  • 10 garlic cloves chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 cup feta cheese optional


  • Chop the bell peppers and onions into slices. Roughly chop the garlic.
  • Add bell peppers, onions and garlice to a frying pan over medium heat with olive oil.
  • Saute for about 5 to 7 minutes until softened and add the paprika.
  • Cook for about another 10 minutes until the onions and garlic start to brown.
  • Sprinkle feta cheese on top and serve!
